A little trick , refrigeration stops the mellowing process, so don't put in the fridge before it's ready (it take 2/3weeks)….I assure you it's worth waiting. It tastes much better than the store bought ones.

Poco tempo fa ho provato a farmi da sola la senape, forse per alcuni di voi è una salsa un po' troppo forte, come il wasabi, perché arriva diretta al naso, ma io la trovo deliziosa…sono "senape coi semini dipendente" direi.
Un trucchetto, quando mettete la senape in frigo il processo di maturazione si ferma, quindi meno la volete forte più dovete aspettare. Non mettetela "al fresco" prima che sia pronta (2/3 settimane). INGREDIENTS:
1 cup yellow mustard seeds
1 tbsp rice flour
2 cups of liquid (I used 1/2 beer and 1/2 water)
5 tbsp coconut sugar
2 tsp salt
If you want a cream, toss all the ingredients in a high speed blender and whizz till it's as smooth as you like. I prefer the grains, so I simply packed it into sterilized glass jars and stored it at room temperature for 2 weeks. Put it in the fridge. It lasts forever I'd say…
Be creative, use different beers or just water. Add herbs, black mustard seeds, adjust it to your tastes (more sugar, a bit of chive, onion…). Don't forget to have fun! Enjoy!
INGREDIENTI:
1 tazza di semi di mostarda (gialli o neri come volete)
1 cucchiaio di farina di riso
2 tazze di liquidi (io ho usato metà birra e metà acqua)
5 cucchiai di zucchero di cocco

Siate creativi, giocate con le birre, aggiungete erbette, provate con uno zucchero diverso, con la cipolla….basta che vi divertiate! E poi bonappe, bien sûr!
